The granita:

1 1/2 cups unsweetened pomegranate juice (not from concentrate if you can find it)

3/4 cup filtered or bottled water

2 tablespoons sugar + more if needed

1/4 teaspoon kosher salt

The cardamom cream:

9 to 10 green cardamom pods

3/4 cup heavy cream

1 tablespoon sugar

The rose meringues:

1 extra-large egg white (1 ounce)

1/2 cup powdered sugar

Pinch salt

1/8 teaspoon rose water

1/2 cup pomegranate seeds, for garnish
