Ingredients for 4 servings

1/2 cup extra-virgin olive oil

1 tablespoon fresh oregano leaves

1 1/2 tablespoons olive oil

4 medium tomatoes, peeled, seeded, chopped fine, or 2 cups assorted cherry tomatoes, quartered

1/2 tablespoon fresh rosemary leaves

1 1/2 tablespoons fresh marjoram leaves

2 tablespoons salt

1 tightly packed cup washed and spun dry basil leaves (from 1 large bunch basil)

Salt and freshly ground black pepper

2 cloves garlic, chopped fine and crushed to a paste with side of chef's knife

4 (6 to 8 ounce, 1-inch thick) salmon fillets, skin and pin bones removed

1 tablespoon fresh thyme leaves
