2 cloves of garlic

1/2 medium yellow onion

1/2 stick unsalted butter

1/3 cup all purpose flour

2 cups milk

2 cups chicken broth

1 bottle of 12 oz ale (I used Sierra Nevada)

2 dashes worcestershire sauce

1 teaspoon dry mustard

2 pinches cayenne pepper

5 large roasted, seeded and peeled red bell peppers

1 cup grated parmigiano reggiano

1 cup grated extra sharp vermont white cheddar

1 cup grated aged gruyere

salt to taste
