Ingredients

turkey Patties:

2 pounds ground turkey 1 stalk lemongrass, tender inner part thinly sliced

3 tablespoons extra virgin olive oil

3 tablespoons fine breadcrumbs

10 cloves garlic, coarsely chopped

1/2 bunch cilantro, coarsely chopped

1/4 bunch mint leaves, coarsely chopped

1 teaspoon keema masala (see Note) or curry powder

1/2 teaspoon cumin

1 teaspoon paprika

1/8 teaspoon turmeric

2 teaspoons lemon juice

Kosher salt and red pepper flakes to taste

vegetable oil for frying

Garnishes:

1 cucumber, sliced

2 tomatoes, cut into wedges

1 lime, cut into wedges

Handful of each: cilantro, shredded mint leaves

1/4 red cabbage, shredded

hot sauce as desired
