2 tablespoons grated fresh gingerroot

7 cloves garlic , minced

1 teaspoon garlic granules

2/3 cup mellow white miso

1 dash nutmeg

1/2 cup enriched soymilk or milk

2 large acorn squash (3 lbs. each)

1/2 cup dry sherry

1 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/4 teaspoon crushed red pepper flakes

3 1/2 cups vegetarian chicken broth or vegetable broth , boiling

2 medium russet potatoes , peeled and diced (2 cups)

2 teaspoons olive oil

1 medium yellow onion , chopped
