Ingredients for 4 servings

2 large eggs

1/2 cup semi-dry finely crumbled goat cheese, such as Bucheron

1 Tbs. finely minced fresh thyme

Kosher salt and freshly ground black pepper

2 large egg yolks

2 to 3 Tbs. finely snipped chives

1-1/2 cups heavy cream

1/3 cup freshly grated Parmigiano-Reggiano

10 oz. fresh spinach, stemmed and washed

1 partially baked tart shell  in a 10-inch porcelain quiche pan or a 10-1/2- to 11-inch metal tart pan
