2 dried bay leaves

2 lbs potatoes , peeled and sliced 1/3-inch thick

3 lbs fish fillets

4 ounces salt pork , rind removed and cut into 1/3-inch dice

1 1/2 cups heavy cream

salt & freshly ground black pepper

5 cups clam juice

2 medium onions , cut into 3/4-inch dice

2 tablespoons butter

6-8 sprigs fresh thyme , leaves removed and chopped (1 tablespoon)
