1 quart peanut oil

2 pounds ground chuck (80/20 percent) or ground turkey (90/10 percent)

1 cup ketchup

1 chipotle chile in adobo, chopped (canned)

4 burger buns, toasted, for serving

2 cups buttermilk

2 tablespoons ancho chili powder

2 cups all-purpose flour

1 medium Spanish onion, coarsely chopped

1 tablespoon honey
