Definitely whiz up the sauce at the end of cooking using a blender. Just put the whole garlic, lemon zest, sage leaves (minus cinnamon) and the liquid into the blender. Makes an amazing creamy sauce.

olive oil

1 good handful of fresh sage leaves picked

sea salt and freshly ground black pepper

1/2 cinnamon stick

10 cloves of garlic skin left on

565 ml 1 pint milk

115 g 4oz or a pack of butter

zest of 2 lemons

1 x 1 5k 3 lb organic chicken
