1/3 cup Red onion, thinly sliced in half moons

2 tbsp Extra-Virgin Olive Oil (extra for serving)

1 tsp Red Wine Vinegar

5-6 Fresh Basil leaves

Sea Salt and Fresh Black Pepper to taste

Salad greens

Parmesan cheese, shaved slices or fresh grated
