1 cup uncooked quinoa, rinsed (I used a mix of TJ’s tricolor quinoa)

3/4 teaspoon salt

1/4 teaspoon pepper

1 1/2 cups chopped fresh watermelon

1 tablespoon honey

2/3 cup crumbled feta cheese

15-20 basil leaves, chopped

the juice of 1 lime
