8 ounces each ground sirloin and ground pork

1 (about 1/2 cup) small onion, coarsely chopped in a food processor

1/2 cup sour cream

1 large egg, lightly beaten

3 tablespoons fine dry breadcrumbs

1 1/2 teaspoons coarse salt

Freshly ground pepper

1/2 teaspoon ground allspice

1/4 teaspoon ground nutmeg

1 tablespoon vegetable oil

2 tablespoons dry red wine

2 tablespoons all-purpose flour

2 cups homemade or low-sodium store-bought beef stock

1/4 cup coarsely chopped fresh flat-leaf parsley
