  • 1 (about 1/2 cup) small onion, coarsely chopped in a food processor
  • 1/2 cup sour cream
  • 1 large egg, lightly beaten
  • 3 Tbsps fine dry breadcrumbs
  • 1 1/2 tsps coarse salt
  • Freshly ground pepper
  • 1/2 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1 Tbsp vegetable oil
  • 2 Tbsps dry red wine
  • 2 Tbsps all-purpose flour
  • 2 cups homemade or low-sodium store-bought beef stock
  • 1/4 cup coarsely chopped fresh flat-leaf parsley
