200 g mild salami, torn into small chunks

175 g chestnut mushrooms, quartered

1 red chilli, finely diced

25 g butter

1 cup water

1 cup light cream

100 g Parmesan cheese, grated

100 g Pecorino cheese, grated

Big handful fresh basil leaves

Olive oil

Salt & freshly ground black pepper

Extra grated Parmesan to serve
