½ cup diced celery (¼-inch dice)

2 tablespoons chopped fresh flat-leaf parsley leaves, for garnish

½ cup heavy (whipping) cream

2 tablespoons tomato paste

Freshly grated parmesan cheese , for serving

½ cup dry white wine

8 ounces ground beef chuck

½ cup beef broth

1 pinch ground nutmeg , or more to taste

4 ounces slab bacon , rind removed, cut into ¼-inch dice
