Ingredients for 4 servings

1/2 cup fish sauce

For the Chicken

4 boneless chicken breasts

For the dipping sauce (Nuoc Cham)

1 piece gingerroot , peeled and grated (1 inch)

2 tablespoons peanut oil

1 red chile , seeded and chopped

1 tablespoon sugar

12-20 wooden skewers (soaked in water for at least 30 minutes)

1/2 cup coconut milk

1/2 lime , seeded and chopped

2 tablespoons tamarind paste

For the Tamarind Marinade

3 garlic cloves , crushed
