1 large yellow onion, cut into 1- to 1 1/2-inch dice

Kosher salt and freshly ground pepper to taste

1 tablespoon balsamic

vinegar, preferably white

1 1/2 pounds russet potatoes, peeled and quartered

1 cup whole milk, half-and-half or cream

Freshly ground nutmeg

(8 to 10 turns), or 1/4 teaspoon ground nutmeg
