3 garlic cloves, minced

2 tsp. dijon mustard

2 Tbs. balsamic vinegar

2 tsp. kosher salt

1/4 tsp. freshly ground black pepper

1/8 tsp. red pepper flakes

3 Tbs. olive oil

1 flank steak, about 1 1/2 lb.

1-lb. loaf herbed focaccia

1/2 cup caramelized shallots*

6 oz. mozzarella cheese, sliced 1/4 inch thick

1 cup arugula

olive oil for brushing

salt and freshly ground black pepper, to taste
