Ingredients

2 cups short-grain rice

1/2 cup konnyaku (also called devil's tongue), which has been cut

into 1-inch strips

2 cups dashi (see recipe)

6 tablespoons sake

3 tablespoons soy sauce

1 tablespoon finely minced fresh ginger

2 small burdock roots, rinsed, peeled, thinly sliced and soaked in

water to prevent discoloration

4 fresh shiitake mushrooms, cut into 1/4-inch slices

1 small carrot, peeled and cut into thin 1-inch-long strips

1 chicken breast half, boned, skinned and cut into 1/2-inch dice
