  • 1 1/4 lbs boneless, skin-on chicken thighs
  • 1/2 cup potato starch (may substitute corn starch)
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp dry sherry
  • Freshly ground black pepper
  • 2 qts sunflower or vegetable oil, for frying
  • 1/2 head iceberg lettuce
  • 1/2 Tbsp sunflower or vegetable oil
  • 1 cup scallions, white and light-green parts, chopped (from 2 bunches)
  • 1 medium dried red chili pepper, seeded and chopped (may substitute 1 tsp crushed red pepper flakes)
  • 1/2 cup low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 1 1/2 Tbsps sugar
