1 1/4 cups nonfat milk

10 tablespoons unsalted butter

1 teaspoon salt

1 cup all-purpose flour

6 large eggs

3/4 cup grated Gruyère cheese (4 ounces), plus a little extra for topping (I went by weight, and 4 ounces made way more than 3/4 cup for me)

1 teaspoon freshly ground black pepper

1 tablespoon fresh thyme, minced
