Ingredients for 6 servings

1 1/4 cup plain flour

1/2 tsp salt

113 g unsalted butter, cut into 1cm cubes and very cold (1/2 cup)

1/4 – 1/3 cup ice cold water

1/2 cup shelled peas

1/2 cup shelled and skinned broad beans

1/2 cup chopped green beans, in 2cm pieces

2 x eggs

200 ml double cream

1/3 cup grated parmesan

4 x spring onions, finely chopped

2 tbsp finely chopped parsley

sea salt and black pepper, to taste
