2 tablespoons Olive Oil

2 or 3 cloves of crushed or smashed garlic

1 cup or 2 large leeks, white part only - sliced

1/4 cup or 2 small shallots, sliced or diced

1 cup or (1) pack crimini mushrooms, cleaned and chopped

1 cup or (1) pack button mushrooms, cleaned and chopped

1 cup dried exotic mushrooms (shitake, porcini, morel, etc) reconstituted

2 small potatoes (red will do)

4 cups separated - veggie stock (you can use chicken stock if you prefer)

1/2 cup White Vermouth

2-3 tablespoons flour

dashes of nutmeg to taste ( 1/4 - 1/2 teaspoon likely)

splashes white wine vinegar

1-2 tablespoon fresh thyme (or more if you like)

salt and pepper to taste

drops of creme fraiche optional
