A Gooey, Decadent Chocolate Cake Recipe

Been making this cake for a while and is a hit everywhere. The bits of finely chopped chocolate in the frosting is always a pleasant surprise. But a big tip: the cake is VERY delicate. It really does take on the same texture as that of the inside of a chocolate truffle. As a result, I make extra frosting. This always for a liberal amount put on the cake but it prevents overworking the frosting which could compromise the cake layers. Wonderful recipe.

Ingredients for 6 servings

1 teaspoon vanilla extract

2 cups sugar

1 1/2 cups cold water

1 1/2 sticks unsalted butter, at room temperature

2 eggs

3 1/2 ounces semisweet or bittersweet dark chocolate, melted and cooled

Chocolate Chip Butter Cream, recipe follows

2 1/2 cups cake flour

1 teaspoon salt

Chambourd raspberry liqueur, for drizzling

Dark chocolate shavings, for decoration

1 1/2 teaspoons baking soda
