Ingredients for 8 servings

7 x medium-sized potatoes, boiled in their jackets and cooled, preferably at least 4 hours in advance (I used about 1 3/4 pounds potatoes)

10 tbsp vegetable oil

1 tsp whole fennel seeds

1 tsp whole cumin seeds

1 tsp whole black mustard seeds

12 x whole fenugreek seeds

3 x whole dried hot red peppers

1/2 tsp ground turmeric

1 1/2 tsp salt (or to taste)

1 tbsp lemon juice
