Ingredients for 4 servings

2 tbsp Flour (I used Gluten-Free Rice Flour)

Freshly ground black pepper

Sprinkling of dried mixed herbs

6 x skinless chicken breast portions, cut into chunky pieces

2 tbsp extra virgin olive oil

6 rashers (slices) 6 rashers (slices) very lean bacon, cut into cubes

8 oz Shallots, peeled and halved if large

2 x garlic cloves, peeled and crushed

2 x Zucchini, sliced

1 x red (bell) Pepper, deseeded and sliced

1 x green (bell) Pepper, deseeded and sliced

1 1/4 cup chicken or vegetable stock (I used gluten-free)

1 1/4 cup White Wine (the alcohol will burn off during cooking)
