Ingredients for 4 servings

1 medium onion , diced

2 cups chicken broth (or 2 cups chicken broth and water)

1 cup coconut milk

1/2 teaspoon curry powder

salt and black pepper

1 1/2 cups long grain brown rice

2-4 chicken thighs , skin on and bone in are OK

1/2 cup frozen spinach , thawed (optional) or 1 cup fresh spinach (optional) or 1/2 cup broccoli floret (optional) or green beans (optional) or frozen mixed vegetables (optional)

1 teaspoon dried thyme

1 (15 ounce) can black beans or dark red kidney beans , rinsed and drained
