½ cup butter cold and cubed

⅓ cup cold water

1 tablespoon apple cider vinegar

1 tablespoon oil

2 mediums sweet potatoes peeled

½ medium white onion diced

1 clove garlic

⅓ cup water

1 medium red pepper diced

1 cup black beans drained and rinsed if using canned

½ cup fresh cilantro

1 teaspoon chipotle powder

½ teaspoon each salt and pepper

2 tablespoons water
