Ingredients for 6 servings

2 1/2 cups water

1/2 cup quick-cooking grits

1 cup grated sharp Cheddar

1 tablespoon unsalted butter

2 slices of lean bacon

1 green bell pepper, chopped fine

1/2 cup fresh or frozen baby lima beans

1 1/2 cups fresh corn kernels including the pulp scraped from the cobs (cut from about 2 ears of corn)

1 large egg beaten with 1 tablespoon water

fine dry bread crumbs for coating the grits

vegetable oil for frying the grits
