3 cored and peeled golden delicious apples

1/2 stick unsalted butter

1/4 cup brown sugar

1/4 cup granulated sugar

1 vanilla bean (split open, seeds scraped)

1/4 tsp nutmeg

1/4 tsp cinnamon

pinches of salt

1/4 tsp vanilla

2 Tbsp. and 1/2 tsp. corn starch
