Ingredients

Yellow Curry Paste

6 to 8 dried red chile peppers, each 2 to 3 inches long, or chiles to taste

1 tablespoon coriander seeds

1 teaspoon fennel seeds

1/4 teaspoon white peppercorns

3 whole cloves

1 tablespoon thinly sliced garlic

2 tablespoons thinly sliced shallots

1 tablespoon thinly sliced lemongrass

1 teaspoon peeled and finely chopped fresh ginger

1 teaspoon peeled and finely chopped fresh galangal

1 teaspoon finely chopped lime zest (kaffir lime, if available)

1/2 teaspoon shrimp paste

1 teaspoon salt

1 tablespoon curry powder

1/4 teaspoon turmeric

The Curry

20 medium prawns, shelled and deveined

2 cups coconut milk

1 pound Yukon Gold potatoes, peeled and cut into 1/2-inch cubes

3 cups chicken stock

1 cup half-and-half

2 teaspoons palm sugar or brown sugar

2 tablespoons fish sauce
