  • Yellow Curry Paste
  • 6 to 8 dried red chile peppers, each 2 to 3 inches long, or chiles to taste
  • 1 Tbsp coriander seeds
  • 1 tsp fennel seeds
  • 1/4 tsp white peppercorns
  • 3 whole cloves
  • 1 Tbsp thinly sliced garlic
  • 2 Tbsps thinly sliced shallots
  • 1 Tbsp thinly sliced lemongrass
  • 1 tsp peeled and finely chopped fresh ginger
  • 1 tsp peeled and finely chopped fresh galangal
  • 1 tsp finely chopped lime zest (kaffir lime, if available)
  • 1/2 tsp shrimp paste
  • 1 tsp salt
  • 1 Tbsp curry powder
  • 1/4 tsp turmeric
  • The Curry
  • 20 medium prawns, shelled and deveined
  • 2 cups coconut milk
  • 1 lb yukon gold potatoes, peeled and cut into 1/2-inch cubes
  • 3 cups chicken stock
  • 1 cup half-and-half
  • 2 tsps palm sugar or brown sugar
  • 2 Tbsps fish sauce
