1 small onion, peeled and chopped into 1/2-inch pieces

1 1-inch piece fresh ginger, peeled and chopped into 1/2-inch pieces

1/2 teaspoon kosher salt

leaves from 2 sprigs of thyme

1 pound carrots, about 6, peeled and chopped into 1/2-inch pieces

1 tablespoon chopped chives or parsley, optional garnish
