Ingredients

The seafood:

1 pound prawns

1 1/2 pounds petrale sole, cut into 2-inch pieces

1 1/2 to 2 pounds Dungeness crabmeat (about 4 crabs)

1 pound clams

2 pounds mussels

1/2 pound scallops (cut into thirds)

1 pound large shrimp

1 Canadian lobster tail (or as many as you can afford)

The liquid:

1/2 gallon whole milk

2 cups half-and-half

1 cup heavy cream + more as needed

1 pouch Zatarain's Crab Boil (see Note)

1 tablespoon sea salt

1/2 tablespoon freshly ground black pepper or more to taste

The vegetables:

8 ounces salted butter

2 cups chopped white onion

1 1/2 cups chopped celery with a couple of leaves

1 teaspoon sea salt

4 russet potatoes, peeled, quartered, cut into 2-inch pieces
