Ingredients for 4 servings

wooden skewers (soak for 30 minutes before using)

2 tablespoons olive oil

2 squares aluminum foil, 12-inch square, cut in half diagonally into triangles

1 pinch salt (to taste)

2 lemons, juice of

4 garlic cloves , finely minced

1 small cucumber , peeled, seeded, and finely diced (use more if you like, I'm not the biggest cucumber fan, so I just use a little for crunch)

1 cup whole milk yogurt (you can use low or no fat, but it isn't as creamy then)

tzatziki Sauce

Trimmings

1 tablespoon fresh oregano , minced

1/2 small white onion, cut into vertical slices

1/2 lemon, juice of

3 large garlic cloves , peeled and roughly diced

1 large tomato , cut into 16 wedges

1 lb chicken breast or chicken breast tenders, cut into 1-inch pieces
