10 Tbs. (1 1⁄4 sticks) cold unsalted butter, cut into 1-inch pieces

1⁄2 cup heavy cream

5 lb. firm but ripe peaches, peeled and halved

3⁄4 cup sugar

2 Tbs. cornstarch

1 Tbs. fresh lemon juice

1 tsp. ground cinnamon

1⁄2 vanilla bean, split lengthwise (optional)

Vanilla ice cream or sweetened whipped cream for serving

1⁄2 tsp. baking soda
