  • 1/2 lb sushi-grade tuna, cut into 1/2 -inch dice
  • 1 Tbsp olive oil
  • Pinch of freshly ground white pepper
  • 3 ozs fresh goat cheese ( 1/3 cup)
  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp mirin
  • 1/2 small garlic clove, minced
  • 1/2 tsp minced ginger
  • Pinch of cayenne pepper
  • Salt
  • 1 Tbsp minced chives
  • 1 cup (lightly packed) small arugula leaves
