olive oil

3.0 tbsp harissa (look in the spice section)

2 onions , thinly sliced

2 tsp each of ground cumin and ground coriander

400.0g tin chickpeas , drained and rinsed

a bunch coriander , roughly chopped

1 small butternut squash , peeled and cut into chunks

75.0g ready-to-eat, dried apricots , roughly chopped

vegetable stock fresh, cube or powder made up to 600ml

FOR THE COUSCOUS

4 carrots , cut into chunks

4.0 tbsp flaked almonds , toasted

300.0g couscous

2 garlic cloves , finely sliced

a bunch flat-leaf parsley , roughly chopped
