2 lb raw shrimp peeled and de-veined OR 2 lbs chicken breasts cut into 1-inch cubes

1 x zucchini, diced

1 large sweet onion, chopped

1 inch piece ginger, grated

1 x jalapeno, seeded and minced

3 medium tomatoes, chopped and seeded

Juice of 1 lime

4 x green onions, chopped

1 tbsp minced garlic

1 tbsp olive oil

2 15-oz unsweetened coconut milk

1 cup chicken stock

1 tbsp brown sugar

2 tbsp tomato paste

2 tbsp curry powder

1/4 tsp cinnamon

1/4 tsp ground cloves

1/4 tsp chili powder
