1 onion, chopped

1 tbsp fresh ginger, peeled and minced

1 tsp cumin

1 tsp tumeric

1 tsp paprika

1 cup cherry tomatoes, halved

1 bell pepper, seeded and chopped

1 tbsp parsley, chopped, plus more for garnishing

1 tbsp cilantro, chopped, plus more for garnishing

1/4 cup green or black olives, pitted and halved

1 cup vegetable stock

2 tbsp tomato paste

2 tbsp olive oil

salt & pepper
