olive oil

75 g butter

for the smashed veg

3 large carrots peeled and cut into small chunks

for the lamb

1 tablespoon flour

2 heaped tablespoons capers soaked drained and chopped

for the sauce

500 ml good quality hot chicken or vegetable stock

sea salt and freshly ground black pepper

a large bunch of fresh mint leaves picked

2 tablespoons red wine vinegar

a large bunch of fresh rosemary

1 bulb of garlic unpeeled broken into cloves

a large swede peeled and cut into small chunks

750 g peeled potatoes cut into large chunks

1 x 2kg shoulder of lamb
