2 Tbs. olive oil

10 oz. sliced cremini mushrooms

2 large leeks, white and pale green parts sliced into thin rounds

5 cloves garlic, minced (1 1/2 Tbs.)

1/2 cup pitted kalamata olives, chopped

1 28-oz. can chopped tomatoes, undrained

2 14-oz. cans white beans, rinsed and drained

1 cup polenta
