1 lemon, zested and quartered

1 cup olive oil

1 teaspoon kosher salt

2 tablespoons fresh herb mix (finely chopped fresh herbs such as oregano, parsley & basil, or your choice)

1 cup fresh or frozen corn kernels

½ cup finely chopped fresh parsley
