1 teaspoon mustard seeds

1 kg celeriac , sliced

1 tablespoon olive oil

3 sprigs fresh rosemary

10 sprigs fresh thyme

1 onion , sliced thinly

50-70 g herbed butter

1 cup dry white wine

2 tablespoons fresh parsley , chopped finely

100 ml cream

400 g baby onions

900 g leg of lamb , boned

1/4 cup grainy mustard

1 tablespoon white wine vinegar

1 teaspoon sugar

3 garlic cloves , crushed

Braised Onions

2 tablespoons cornflour

1/2 cup dry white wine

2 tablespoons olive oil

Buttery Mushrooms

400 g mixed mushrooms, chopped and sliced (Anything you like swiss brown, oyster, shiitake, enoki, chantrelles etc...)

1/2 cup beef stock
