Ingredients for 6 servings

25 ml sunflower oil

100 g massaman curry paste

2-3 large chicken breast fillets, cut into bite-size chunks

4-5 medium potatoes, peeled and chopped into 2cm/1in cubes

4-6 red thai chilis, whole

2 x 400ml coconut milk

25 leaves (approx) thai basil

500 g butternut squash, peeled and chopped into 2cm/1in cubes

fish sauce (to taste)

6 shallots, chopped

4 thai aubergines, quartered

6 kaffir lime leaves
