I would never, under any circumstance, use flour tortillas for enchiladas. Always use corn.

Ingredients for 5 servings

10 small flour tortillas

1/2 purchased rotisserie chicken, taken off the bone and shredded

1 can black beans

3 tablespoons canola oil

1 onion, thinly sliced

1 clove garlic, minced

1 1/2 teaspoons smoked paprika

handful Swiss Chard or other green, chopped

1 cup corn kernels (frozen is fine)

1 tablespoon adobo, from chiles in adobo sauce

1 teaspoon chili powder

1 teaspoon ground cumin

3/4 cup canned tomatoes

1 tablespoon brown sugar

1/2 cup shredded cheese, preferably a mix of sharp cheddar and jack

salt
