  • 1 pork tenderloin (about 1 lb)
  • 4 poached eggs, for plating
  • 1 to 2 cloves garlic, chopped
  • 4 portobello mushroom caps, wiped clean
  • 1 tsp ground ginger
  • 1 tsp vanilla extract
  • 6 egg yolks, room temperature
  • 1/2 tsp ground nutmeg
  • 4 to 5 Tbsps vegetable oil
  • 2 lbs baby spinach
  • 2 medium to large sweet potatoes, peeled and shredded
  • 1 lb roasted peppers, sliced
  • 1/4 cup brown sugar
  • 3 Tbsps all-purpose flour
  • 1 egg
  • Salt and pepper
  • 1 lb (4 sticks) salted butter
