1/2 cup Late Harvest Riesling

1 medium onion, coarsely chopped

1 head of garlic—1 small clove minced, the rest coarsely chopped

4 thyme sprigs

6 tablespoons extra-virgin olive oil

4 chicken breast halves, on the bone with wings attached

1 tablespoon balsamic vinegar

2 teaspoons red wine vinegar

1/2 tablespoon finely chopped basil

3/4 teaspoon Dijon mustard

Salt and freshly ground pepper

1 large red onion, cut lengthwise through the core into 8 wedges

One 1 1/2-pound butternut squash—halved lengthwise, seeded and cut into 16 wedges

1 large apple—halved, cored and cut into 8 wedges

4 slices of bacon, halved crosswise
