6 ripe tomatoes, , peeled and chopped

1 purple onion, finely chopped

1 cucumber, peeled, seeded, chopped

1 sweet red bell pepper (or green) s, seeded and chopped

2 tablespoon(s) 1-2 Tbsp fresh parsley, chopped

2 bulb(s) 1 clove garlic, minced, minced

1/4 cup(s) red wine or balsamic vinegar

1/4 cup(s) olive oil

2 lime or lemon juice, freshly squeezed

2 pinch(es) Salt and fresh ground pepper to taste, to taste

6 cup(s) cups tomato juice

1 box(es) croutons, seasoned or plain

1 stick(s) butter, to saute the croutons and garlic

1 bunch(es) green onions

2 cucumber, peel and seed one for the blender

1/2 teaspoon(s) cumin
