Ingredients for 13 servings

1 1/4 cup tapioca starch or potato starch (not potato flour- too heavy)

1/2 cup organic coconut flour

1/2 cup sorghum flour

1/2 cup quinoa flakes

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp sea salt

1 tsp xanthan gum

1/2 tsp ground cinnamon

1/4 tsp ground ginger

1 cup organic light brown sugar

3 x beaten organic free-range egg whites

1/2 cup light olive oil or grapeseed oil

1/3 cup plain yogurt (I used Whole Soy Yogurt)

2 tsp bourbon vanilla

1/2 cup So Delicious coconut milk - more if needed (I used up to 3/4 cup)
