  • 1 1/4 cup tapioca starch or potato starch (not potato flour- too heavy)
  • 1/2 cup organic coconut flour
  • 1/2 cup sorghum flour
  • 1/2 cup quinoa flakes
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp xanthan gum
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1 cup organic light brown sugar
  • 3 x beaten organic free-range egg whites
  • 1/2 cup light olive oil or grapeseed oil
  • 1/3 cup plain yogurt (I used Whole Soy yogurt)
  • 2 tsp bourbon vanilla
  • 1/2 cup So Delicious coconut milk - more if needed (I used up to 3/4 cup)
