Ingredients for 8 servings

2 tablespoons light brown sugar

1/4 cup toasted sesame seeds

1 1/2 lbs boneless skinless chicken breasts

1 lb fresh Chinese noodles or spaghetti

1 medium carrot , peeled and grated on large holes of box grater (about 2/3 cup) (optional)

2 tablespoons salt , divided

1/4 cup creamy peanut butter (Jif recommended)

crushed red pepper flakes (optional)

5 tablespoons soy sauce

2 tablespoons rice vinegar

4 scallions or green onions , sliced thin on diagonal

1/2 cucumber , sliced on box grater and chopped into matchstick-sized pieces (optional)

2 medium garlic cloves , minced

1 teaspoon hot sauce (like Tabasco)

fresh ginger , grated or minced (about 1 tbsp, I use the minced ginger that comes in a jar)

2 tablespoons sesame oil

hot water
