2-3 green bird chilies or 2 large jalapeños, seeded and minced

1/2 teaspoon salt

1 cup basmati or jasmine scented long grain rice

1 -inch piece of ginger, peeled and grated

2 tablespoons green cardamom pods, crushed

1/2 cup unsalted cashews, whole or pieces

Juice of ½ lemon

1 tablespoon yellow or black mustard seeds

2 small white onions, finely chopped

5 whole cloves

1 teaspoon ground turmeric

2 tablespoons chopped cilantro

1 tablespoon canola oil
